東京都青梅市でチーズを製造している工房です。青梅市と瑞穂町の生乳を使い、青梅の小澤酒造の日本酒を利用してチーズを作っています。青梅の産物を利用することによって、青梅固有のチーズを生産していくことを目標としています。
